Fresh and Tasty Summer Sausages

Prep: 20 minutes

Cost: $11

Yes, this meal was as good as it looks.

I made a great Greek salad as our vegetable source. Lots of red peppers, onions, cucumbers, cherry tomatoes, black olives, and feta. Olives and feta were both on sale for $0.99 per hundred grams this week!

Our starch was yellow skinned potatoes with fresh chives and green onions from our garden. Yum!

Our protein was Chorizo sausages cooked on the barbeque.

For dessert, we had watermelon because that is what you do in the summer.

Our setting was our beautiful patio, although a couple wasps annoyed me very much!

Ok, so after my last post where I looked like a horrible person who is raising her family to be junk-eating malnurished hobos, I did feed them fruit for dessert

We ate a whole watermelon, and Matt classed it up some by stuffing raspberries in the middle of some pieces.

Slow Cooker Strikes Again

Cost: $12

Prep: 20 minutes +

I haven't brought out the slow-cooker for a while, and parts of it were good. Specifically, the roast beef was great. Very tender! It was huge, however. I could have bought one about 1/2 the size. We ate sandwiches for days after and eventually had to throw some away.

I made a great gravy to go with this, and Matt likes to eat his roast with the onions from the slow cooker.

I also put potatoes in the slow-cooker, and they were gross. So let's not talk about that.

Steamed green beans were served as the veg. Yum!

For dessert, Charlie ate his weight in watermelon. I also ate his weight in watermelon. Matt, however, ate his own weight. It was an expensive dessert.

Sole Curry

Cost: $5

Prep: 30 minutes

We tagged team dinner tonight, and the prep went QUICK. Matt has been being a huge help in the kitchen, which is awesome, as it has been running very smooth.

Tonight, Matt whipped up a curry while I did the fish, rice, and dessert.

The curry had peanut butter, coconut milk, garlic, ginger, red pepper, green pepper, onion, baby corn, and an assortment of spices.

The fish, sole, was lovely, but way too small a serving. Charlie loves fish, and there just wasn't enough for him considering I seem to have only bought just over 100 grams.

Anyway, it was a decent meal with lots of leftovers. We ate very sour fresh strawberries for dessert, after which Charlie did his adorable baby sign and little word "more", which sounds more like "mohr".

Breakfast Bookends

Prep: 15 minutes

If I had wrote this post any sooner it would have something scathing about Matt. But, because we have waited a few days, I have cooled off from Matt with his sad puppy dog eyes coming home in the middle of Charlie and I eating and saying, "That's okay you didn't make me any. I would have eaten it cold, but I just wont eat" or something to the like. Seriously!

Once I convinced him to go make himself some darn eggs, he asked me what heat to cook eggs at. Then I saw what his eggs looked like, and I realized the reason he doesn't come home and make his b for d is because he doesn't know how to make eggs.

So, anyways, we all ate b for d with the delicious rosemary foccacia bread from Thrify's and a pineapple that was too ripe and tasted like a pina colada.

I also wanted to talk about my lunch.

I wasn't so into dinner anyways because I had had a large lunch at school. Imentioned earlier in the week that I buy my lunch almost every day.

Today's lunch meal was a small salad (with far far too much dressing), spaghetti and meatballs with olive bread. Looks yummy? It was. I also had a yoghurt and an orange.

B for D

Prep time: less than 10 minutes

Matt did not join us for dinner tonight; I had had a very busy, long day; Charlie enjoys pulling my wet shirts from the laundry and running around with the shirts over his face, regardless of walls in his way. So, anyway, Matt had rugby until 6PM and Charlie and I cannot wait to eat until then, so we had a quick breakfast for dinner. I didn't make for Matt, as it would have been cold before he got home, so he still hasn't eaten yet.

I tried to make this dinner healthier by serving it with a lot of fruit. We picked up a little water melon, about the size of a bocce ball, when we were at Walmart the other day ($2.50). We ate 1/2 of that, although it was difficult as I had to take it apart for C because of the seeds. We also shared an orange and a few grapes.

The bacon is the Natural Selections variety, even though I hear it is not actually any less full of nitrates than regular bacon. Still, it is really nice bacon. I like to broil it so it is flat.
I fried our eggs: 2 for me, 1 for Charlie. I like my yolk soft, and it was a little harder tonight, but C gets his completely cooked through. I'm not sure if I am supposed to feed him runny eggs, but I have no idea how he would manage to eat a runny egg anyway.

For our grain product, we shared an English muffin with light herb and garlic cream cheese. This was very satisfying, especially when combined with the bacon and eggs; it was almost like having a Hollandaise sauce or something.

Honestly though, I am still hungry and looking forward to a snack tonight...

Big Breaky

Charlie and I slept in this morning and woke ourselves up to a nice, big breakfast.

We had bacon, eggs, toast, strawberries, and hashbrowns.

The most important part, however, was the coffee. But, if you ask Charlie, it was the ketchup.

Stuffed Chicken Breast

Prep time: 15 minutes

The grandparents took Charlie to McDonalds for lunch, so I am glad I had a reasonably healthy dinner for tonight.

We had bone-in stuffed chicken breasts that were clearanced for around $3. It was stuffed with roasted red pepper stuffing. Very nice. We did eat the skin, which we usually don't do, but it was seasoned very nicely.

I steamed some broccoli and roasted some tiny little tri-colour new potatoes. Those were GREAT. So yummy after being rolled in olive oil, salted, peppered, and baked on a tray at high heat. I am excited that there are leftovers to make hashbrowns with tomorrow morning.

For dessert, we had a bowl of strawberries.

Cheap chicken dinner

Cost: $8 (including dessert)

Prep: 15 minutes

This dinner was boring. In fact, it was so boring, I don't even remember the details.

I bought the chicken clearanced for only $5 and used it the same day, so the value was great. I simply salt and peppered it and roasted it for a couple hours in my great-grandma's roasting pan. I used the drippings for making tiny bit of gravy.

There was also some sort of starch....I'm not even sure what it was. It did not require gravy...For the life of me, I cannot remember what it was. Oh well.

As our veggie, we had steamed green beans. The WORST vegetable I ever tried to eat. So tough. Just awful.

The best part of this meal was the dessert: a big bowl of fresh strawberries. Matt had his with Splenda, but Charlie and I skipped it and enjoyed the berries plain.

Goldilocks Cooks Eggs

Prep time: 5 minutes

If Goldilocks made breakfast for dinner for the three bears, this is what she would have made them. And then they would have eaten her because it was not very filling. Unless, in Goldilock's good luck, they were not very hungry because they had eaten a huge, greasy, delicious, high salt lunch.

Oh wait, that was us. We ate super-crap at lunch, even the baby. So, we agreed, no salt for dinner.

The other problem was that a certain husband told a certain wife we were going to certain in-laws for dinner, so even though a certain family was at the grocery store that morning, there was no plan for dinner.

So, we did breakfast for dinner again: eggs, English muffin, and a whole cantaloupe.

There was a Daddy Bear sized portion, eggs scrambled.

There was a Mommy Bear sized portion, eggs soft fried (if that is a thing).

There was a Baby Bear sized portion, egg fried solid. Interestingly enough, he will eat an egg like this, but not scrambled.
