Blueberry French Toast!

Since it was a lazy Saturday morning followed by a very busy Saturday, I wanted to make something special for breakfast. French toast is Matt's favorite, so this was his vote. I like French toast because you get a serving of protein in as well.

So, I made a pile of toast: 8 pieces which used 4 eggs. If anyone doesn't know how to make French Toast, you must come over, and I will cook it FOR you, and then you will know how.

To make this even more special/delicious, I made us syrup as well. In a pan, I melted a bit of butter then added about 1/3 of a bag of blueberries. I don't particularly like these blueberries. The brand is Europe's Best, and they are "wild blueberries" which seems to just mean super small. Because they are so small, I find that they are not very good for adding to a lot of things, like pancakes for example. I was glad to use them up.

I simmered the blueberries in the butter then added a crap load of brown sugar (as Matt later told me, it was "Golden" sugar, not brown) and some cinnamon. I then simmered until it was thick like syrup.

The sauce was very special, but I found the flavor overpowered the toast. Matt and Charlie really liked it, especially Charlie who mostly picked out he blueberries.

Simple Meal for our Simple Family

Cost: less than $5

Prep: 5 minutes

We were having some fun family time going to the park near our house, as well as walking back on our 10 inch legs...oh wait, no, that is just Charlie. But we all enjoyed our family time, so we were glad that the dinner we planned was quick, easy, and simple.

We ate some all beef sausages, the left over baked potatoes (with sour cream and green onions), and steamed broccoli and snap beans. The sausages were marked down to $2.50, so this was a super cheap meal as well.

Because we did so well, Matt went out and got Coldstone Creamery for him and me. They have a deal right now where it is only $2 for a Love-It size. You can choose any of their signature creations and then replace any mix-ins you want. Mine was chocolate ice cream with Skor bar and pecans. YUM!

Something is up with my blog

I'm not sure what has happened, but I am not seeing any information on my blog. It is almost like the language has been changed to something my computer can't read. The title is not "What..." it is "a000". I will hopefully be able to update later, as I can't find where to edit right now. Eek!

Shhhhh...

Shhhhhhhh. I'm not telling what we had for dinner tonight.

I got home from work at 3:30ish and Charlie still was not asleep--he goes down at 3PM. I really needed a nap, I was so exhausted. So I lay down. A few minutes later I hear a crash in Charlie's room. I go running in, and he has ripped his painting off the wall. He looks at me, and I see his little face crumpling. He must have scared himself.

I picked him up and cuddled him in his rocking chair for a few minutes. I put him back in his crib, and I went back to lie down. He cried for a couple minutes, not wanting to nap. But, within a couple minutes, he was asleep.

Ten minutes after that, freaking UPS rings the doorbell. (This is the THIRD time they ignored our sign asking for people to knock softly and not ring the bell, and after the first time a couple weeks ago when they did this, the sign that had been up since OCTOBER conveniently disappeared.) So, of course, Charlie was up again. I left him for a few minutes, but there was no way that he was going back to sleep. I went and got him up, and we cuddled on the couch and then played with toys.

I saw time passing. I had sausages defrosted. By 5:15, I was thinking, "I really don't want to make dinner." I knew Matt would be coming home soon. So, when Matt got home, Matt went back out to get us some food.

Now, I will not tell you what we had, but if you can guess by the picture, then you may know the answer.


Reasonable Chicken Dinner

Cost: $10 (+the cake)

Prep: 40 minutes

We had a guest for dinner tonight. Our friend Melissa was in town and graced us with her presence at dinner. It was great to see our friend, but unfortunetly I didn't have time to do anything special for dinner except add some rolls and an extra vegetable.

Charlie did something special though: he wore a gold sticker on his forehead for most of dinner, until I tried to take a picture. Then, he took it off and tried to eat it, so that was the end of that.

For dinner I made Shake'n'bake chicken legs, cresent rolls, steamed brocoli, corn, and baked potatoes. Nothing was all the great, and only one thing was terrible. Can you guess what was terrible? Of all things that could be, it was the freaking canned corn! It was the worst canned corn I have ever tasted. It wasn't sweet at all. It was Thrify's Compliments brand, and everything we have tried from this product line has been terrible. We will not be trying it again.

The baked potatoes were also way too big, but we got around this by eating only 1/2 of one each. I slathered mine with fat free sour cream and green onions.

Anyway, we ate sensible portions for dinner.

Therefore, we indulge in dessert. Matt bought a little black forrest cake from the grocery store. It was fairly decent for a store bought cake, maybe a little on the dry side with not enough filling, but it still hit the spot.

Cod in my Bod(y)

Prep: 30 minutes

This meal was quite a bit more expensive that it usually is because of the size of the package of fish. It was 4 cod fillets, and it left Matt with an entire lunch for tomorrow. The package was 800 grams, and we probably would have been better off with about 500 or 600.

Anyway, light egg wash and flowering, fried in canola oil. The fries are McCains. Until I get a mandolin, I can't make my own chips. It just takes way too long adn is too labour intensive. At least we buy the "low-fat" ones that taste crappy.

We mixed up some tartar sauce: 2 parts mayo, 1 part relish. We steamed up some broccoli. We are some fish and chips.

At one point we thought Charlie was putting fish in his toes, but on closer inspection, he was eating his toe lint. Yuck! Oh well, maybe he just isn't a fish person? We did get him to eat a fair amount though.

The only looming problem of this, one of our favorite meals, is the clean up. Just the battering makes a mess, not to mention the amount of dishes. Oh well. Matt does them anyways.
